Ice Cream Bars At Home
Remember the ice cream truck? Remember getting your favorite frozen treat on a warm summer’s day? Well, we’ve got a DIY recipe to recreate one of the classic faves at home – and it’s keto friendly!
If you loved the Strawberry Shortcake Ice Cream Bars, you’ll only need a few ingredients to make them at home yourself!
4 Ounces of Fresh Strawberries 2 Ounces of Cream Cheese 1 Atkins Strawberry Shake 2 Atkins Strawberry Shortcake Bars 1 Tablespoon of Granulated Sugar And 8 Silicone Ice Pop Mold!
In a blender, puree shake, strawberries, cream cheese and sweetener (try truvia!) until well combined and smooth.
Evenly divide between the ice pop wells and freeze until solid, at least 4 hours.
Using a food processor, crumble the Atkins Strawberry Shortcake Bars and pulse to reach a sand like texture.
Spread out on a sheet pan in an even layer. Once the ice cream bars are frozen, gently remove from the molds and place on top of the shortcake bar crumbs.
Allow to sit for about 5 minutes, then cover bars with parchment paper and gently press the bars into the crumbs to create a crust of crumbled bar.
Gently remove parchment and place bars (back on the sheet pan) back into the freezer for at least 5 minutes to allow the bar crust to solidify before serving.
