Think you can’t have waffles on a Keto diet? Think again! Atkins and Hollywoodlife have the perfect recipe for you.

First, this recipe calls for the use of a mini waffle maker, a great investment while on Keto.

Next, in small bowl, mix 1 egg, 1/2 tbsp. Mayonnaise, 1 tbsp. Coconut Flour, 1/4 tsp. Baking powder, and 2 tbsp. of water.

Allow the mix to sit for 3 mins while the waffle iron preheats. Lightly spray waffle iron with oil before filling.

Fill mini waffle iron with 3 tablespoons batter & cook for 3-5 minutes, or until steam is no longer escaping.

Remove to cool on a rack.

Two mini waffles are to be enjoyed per serving!
