What's better than watching football with a big bowl of 7-Layer Dip – especially, if it’s Keto friendly!

The first step is to make Maria’s Keto Friendly Refried Beans, made from the versatile veggie – Eggplant!



Peel and cube the eggplant & stir-fry with 4 strips of bacon in a large, heavy skillet over medium-high heat.

When the bacon is crisp & the eggplant is very soft, take it out and puree.

But don’t lose the bacon fat. You’ll need it to cook one large onion in, about 3 mins. Then, add the garlic, jalapeño, chili powder, cumin, salt, and cayenne. Flavor town! 

Now that you have that time to build the dip! You’ll need: 

—  1 batch Maria’s Keto Refried Beans    —  1 cup sour cream (or guacamole for dairy-free)   —  1 cup salsa   —  1 cup shredded lettuce   —  1 cup shredded cheddar cheese        (omit for dairy-free option)   —  3 green onions, white and green parts chopped  —  1 medium tomato, diced   —  ¼ cup sliced black olives, optional   —  Pork rinds   —  Carnivore Crisps

In a large glass bowl or 9-inch pie plate, spread the refried beans. Spread the sour cream (or guacamole) on top of that.

Layer the salsa on top of the sour cream followed by shredded lettuce, cheese, green onion, and diced tomato. Add black olives if desired.

Serve with pork rinds and Carnivore Crisps – and enjoy!
