Bring a pot of salted water to boil. Cook high fiber durum semolina Italian pasta al dente (about 7 minutes).

While the pasta cooks, place 2-3 tablespoons oil and 2 cloves fresh garlic, smashed and minced, in a skillet on medium heat.

When the garlic begins to sizzle, add a pinch of salt, red pepper flakes and 6-8 cherry tomatoes, quartered.

Reduce heat to simmer and stir in 1 cup cooked or canned cannellini beans. Cook for 3-4 minutes.

Stir in escarole, a generous pinch of salt and simmer until the escarole just wilts.

When the pasta is done, drain but do not rinse and mix gently with cooked greens and beans. Serve immediately – and enjoy!
