HOW TO MAKE

In the UK we love a turkey, but what I really love is a Beef Wellington. There's nothing better than making the perfect one for you and your family.

Wrap 2 beef fillets (400g) in cling wrap to set the shape & chill overnight.

Next day, sear the fillets in a hot pan with some olive oil for 30-60 secs until browned all over.

While that cools, finely chop mushrooms & fry in a hot pan. Add thyme & continue to cook over high heat.

After 10 mins, you’ll be left with a mushroom paste, known as duxelles. Now, you’re ready to assemble.

On cling wrap, layer 4 slices of Parma ham, the duxelles, and the beef fillets, rolling the ham over the beef to create a log. Chill for 30 mins.

Wrap the log with puff pastry you’ve brushed with an egg wash. Chill again.

When it’s time to cook, score the pastry lightly, brush with egg wash again, then bake at 400F for 15-20 minutes until the pastry is golden brown and cooked.

Rest for 10 minutes before carving.
