Peanut Stir Fry

Let’s get started! In a large pot, bring 8 quarts of water to a rapid boil and season with salt.
In a medium-sized bowl toss 3/4 lb chicken breast, thinly sliced with cornstarch until coated.
Add in 8 oz broccoli florets to water & cook for 2 minutes, until bright green and almost tender. Use a slotted spoon to transfer broccoli to a bowl.
With the water still boiling, add the chicken to the water and cook for 4 minutes until the chicken is cooked through, stirring once to break it up.
Time to make the sauce. You’ll need to mix 1/3 cup Kodiak Cakes Maple Peanut Butter Syrup with 1 tsp fish sauce, 2 tsp red curry paste and 1/4 cup low sodium soy sauce or tamari. Yum!
In a large skillet over medium-high heat, add oil. Once glistening, add cooked soba noodles and cabbage, using a wooden spoon to break them up.
After 2 minutes, add in sauce, broccoli and chicken and toss to combine.
Serve topped with crushed peanuts and fresh cilantro and enjoy!
