SPAGHETTI SQUASH CACIO E PEPE

Daphne, who is now a WW ambassador, has a simple take on Cacio E Pepe using Spaghetti Squash. Bonus – it's only 4 SmartPoints per serving!
First, you’ll need to preheat the oven to 400°F. Nice and hot!
Next, take a medium spaghetti squash & cut in half lengthwise. Remove the seeds.
Place both squash halves cut side up on a rimmed baking sheet, & coat with a few sprays from an oil mister. Season each with 1/2 tsp of the salt.
Roast the squash for 45 minutes to 1 hour, until a fork easily slips all the way through & the flesh fluffs into spaghetti-like strands.
Add the Parmigiano and olive oil, then toss and season with additional salt and pepper to taste – then serve!
