Looking for a colorful, delicious salad to serve this spring? Look no further than this recipe for a Fresh Wisconsin Mozzarella-Strawberry Caprese Salad from Hollywoodlife and Wisconsin Cheese!
First, you need to make the Honey-Balsamic Vinaigrette. Very simple: just whisk 2 1/2 tbsps. balsamic vinegar with 1 1/2 tbsps. honey. Then slowly add 1/4 cup olive oil as you whisk.
Next, the salad. For this, you’re going to want to combine 2 bags of baby spinach with 1 cup fresh basil leaves, coarsely chopped. Give them a toss in a bowl with half the vinaigrette.
For the cheese, to create the nice, layered look, you’re going to want two types of mozzarella: a log and “Ciliegine: or cherry-sized balls.
Place half of the spinach mixture in a serving bowl or trifle. Top with strawberries, tomatoes and fresh mozzarella ciliegine, cut in halves.
Drizzle with half of the remaining vinaigrette. Repeat layers, starting with the spinach mixture.
