The renowned Carlo’s Bakery owner, who made a name for himself sharing his baking tricks on TLC, has taken on a new challenge as the Brand Ambassador for Whole Earth Sweetener, a new line of zero-and lower-calorie sweeteners that can help anyone looking to cut the sugar for their everyday diet. “No matter what the recipe, any baker can do wonders in the kitchen with some good ingredients and an upbeat attitude!” shares Buddy, who gave HollywoodLife.com a behind-the-scenes tour of his state-of-the-art bakery in New Jersey in honor of the new partnership.
Buddy, a fourth-generation baker and father of four, realizes how difficult it be to cut sugar entirely from our everyday food routine. “I drink a cup of coffee first thing every morning with milk and sugar, but I want to make healthier lifestyle changes, ” he explained. Of course — everyone does! — but how can it be done without sacrificing taste? That’s especially important when you’re a baker crafting the sweets that people love to enjoy. “Cakes are special — every birthday, every celebration ends with something sweet: a cake!” Buddy added. “And people remember it. It’s all about memories. I decided to partner with Whole Earth Sweetener Co., who just debuted a line of great tasting, lower calories sweeteners, so I can keep baking delicious cakes for my family with reduced levels of added sugars. Makes 3 dozen (each about 3-inches in diameter)
3-1/2 cups all-purpose flour
1-1/4 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon ground cloves
1 teaspoon ground ginger
1/4 teaspoon kosher salt
2/3 cup unsalted butter, softened
1/2 cup plus 2 tablespoons Whole Earth Sweetener Agave 50
6 tablespoons Whole Earth Sweetener Baking Blend
1/4 cup nonfat milk
1 teaspoon vanilla extract
Sift dry ingredients; set aside
Beat butter and Whole Earth Sweetener products in large bowl of mixer until well combined. Stir in dry ingredients alternating with milk and vanilla, beginning and ending with dry ingredients; mix well after each addition. Scrape side of bowl occasionally.
Refrigerate dough at least 2 hours before using.
Preheat oven to 400°F.
Roll dough on lightly floured surface to 1/4-inch thickness. Cut into desired shapes. Reroll scraps only once.
Place cookies on parchment paper-lined baking sheets. Bake 9 to 11 minutes or until medium golden brown in color. Remove from oven to wire racks. Let cool 2 minutes. Remove cookies from baking sheet and cool completely.
