Here’s our favorite recipe:
“In a medium saute pan over low heat, saute 1/4 cup minced yellow onion in 1 tablespoon extra-virgin olive oil and 2 tablespoons of low-sodium organic vegetable broth until the onion is translucent. Add 1 cup fresh whole snow peas, 1/4 cup minced red bell pepper, a little less than 1/4 cup low-sodium organic vegetable broth, 1 teaspoon minced garlic, 1/2 tablespoon fresh-squeezed lemon juice, 1/8 teaspoon grated lemon zest, 1 teaspoon chopped fresh parsley, and 1/8 teaspoon black pepper and saute for 4 to 5 minutes. Add 3 ounces of cooked shrimp and heat through. Serve.”
You can add wild rice, spaghetti squash or fresh fruit to amp up the energy of the meal. Yum!
