Honey & Cider Roasted Duck
- 1 duck
- 10 bay leaves
- 2 tablespoons dried thyme
- Sea salt to taste
- Pepper to taste
- 1/2 cup of honey
- 1/2 cup of apple cider vinegar
Preheat oven to 375°F. With a fork, pierce the skin (not the meat) of the duck liberally over the front and back. Season the duck inside and out with salt and pepper, and stuff with bay leaves and thyme. Place duck breast-side down in oven and roast for about 20 minutes or until it begins to brown. While duck is browning, simmer the honey and apple cider vinegar for a few minutes, stirring gently until fully combined, then set aside. After 20 minutes, turn duck over, baste with honey/vinegar sauce and reduce heat to 325°F. Roast duck for another 90 minutes, basting every 15 minutes with the honey/vinegar. After removal from oven, let rest 15 minutes before carving.
