Jennifer Instagrammed two meals throughout her day during her takeover. Her breakfast was a piece of whole grain toast with an egg, avocado and tomato slices. Her lunch was a delicious-looking salad of bulgar, cucumbers, parsley, mint, red onion, garbanzo beans, feta cheese & pistachios.

“The breakfast is filled with protein from the egg, healthy fats from the avocado and fiber from the whole grain bread. Any meal that has at least two of those components, protein, fat, and/or fiber is going to be a fabulous option. It not only tastes great but it doesn’t get digested too quickly which leaves you feeling fuller longer.
Lunch is also similar in that there is protein from the pistachios, beans and feta, fat in the feta and fiber in basically everything else. I love that she is using fresh ingredients to add a lot of flavor to it without adding any sugar. Mint, onions and parsley — or any herbs and spices — are great ways to add tons of flavor to a meal without causing any sugar crashes!”
