This Thanksgiving, I’ll be hosting at my home with 14 guests. There are a lot of mouths to feed, but I still like to make everything myself and have some tips and tricks to share with you. Some preparations seem much harder than they actually are. Homemade cranberry sauce, for example, is easier to make than you think. Simply boil water, sugar, and whole cranberries. But to make it healthier, I use half the sugar that’s typically recommended. I also like to use brown sugar instead of white.
I make a delicious homemade gravy with two special ingredients — some fresh thyme and a little fresh lemon juice. Trust me, these ingredients add the perfect punch of flavor to your gravy. With gravy you need that tasty turkey and stuffing, of course.
Here’s my easy-to-make stuffing recipe:
Start by using the Pepperidge Farm Herb Seasoned Cubed Stuffing (12 oz.) package, which includes the cubed white bread croutons blended with herbs and spices. I like to change it up though to make it my own. For a 16-20 lb turkey, here’s what you need:
2 cups finely chopped onion
2 cups finely chopped celery
1 cup crumbled cooked sweet sausage
2 cups chicken broth
12 oz. pkg. Pepperidge farm stuffing
Instead of using butter, pour a quarter cup of olive oil into a pan on medium-high flame, then simmer to a low flame to add in your chopped onion and celery. Sauté together for about 20 minutes until tender. In a separate pot, boil your 2 cups of chicken broth. Slowly pour the hot broth into a bowl with your 12 oz. Pepperidge farm stuffing package. Mix it through so the cubes get moist, and add in your sauteed onions and celery and cooked sausage.
Then, you can either use the stuffing to stuff your turkey, or bake your stuffing in a separate pan at 350 degrees Fahrenheit for 30 minutes.
Ramona Pinot Grigio Turkey Marinade
1. Marinate your turkey 24 hours in advance of roasting, if possible, but even 6 hours will do
2. Rub 2 tablespoons of kosher salt inside the turkey cavity
3. Put the turkey in a large bowl and squeeze three fresh lemons over the turkey
4. Pour 1 bottle of Ramona Pinot Grigio over the turkey
5. Every 6 hours turn the turkey over, lying on breast side or bottom side
